1.200 BEEF CHEEKS IN BITES WITHOUT FAT

4 SOUP SPOON OLIVE OIL

1 CHOPPED ONION

1 GRATED CARROT

1 GRATED CELERY

3  SOUP SPOONS OF PAPAYIANNIDES SAUCE

1 RED WINE CUP

2 CUPS OF BROTH

 

FOR THE NOODLE:

500 GR NOODLE

1/4 CUP OF OLIVE OIL

1/2 CUP OF DRY WHITE WINE

GRATED PECORINO

1 CUP OF BROTH

1 GRATE TOMATO

WATER

 

 

– BOIL THE MEAT, ADD THE ONION, THE CARROT AND THE CELERY

– FINISH WITH WINE, LET IT EVAPORATE

– ADD THE PAPAYIANNIDES SAUCE, ΤΟΜΑΤΟ AND THE BROTH UNTIL IT STARTS BOILING AND LOW THE FIRE

– PUT THE LID IN THE POT AND SLOW COOK FOR 2.5 HOURS

 

FOR THE NOODLE:

– HEAT THE OIL IN THE POT AND BROWN HALF THE NOODLE

– ADD THE REST UNTIL IT GETS OILED GOOD

– FINISH WITH WINE, ADD BROTH AND WARM WATER

– SLOW BOIL AND STIR FOR 10 MINUTES

– TAKE OFF THE FIRE AND ADD SOME SPOONS FROM THE MEAT SAUCE

– ADD CHEESE WITH THE MEAT IN ONE POT
